Three Chefs Unite to Bring Thailand's Rich Culinary Heritage to Singapore at Grand Copthorne Waterfront Hotel



Thai cuisine is taking centre stage once again at Food Capital, as Grand Copthorne Waterfront Hotel Singapore launches the return of its highly anticipated Thailand Flavourscape Buffet, offering diners a month-long gastronomic journey across the Kingdom's diverse regional cuisines.



Running from 13 July to 10 August 2026, this year's edition expands beyond the success of the inaugural Phuket-themed showcase by celebrating flavours from across Thailand through an exclusive six-hands culinary collaboration. Supported by the Royal Thai Embassy Singapore, the experience brings together three accomplished chefs, each representing a distinct perspective on Thai cuisine.


Leading the collaboration is MasterChef UK finalist Chef Nawamin "Boss" Pinpathomrat, the owner-chef behind REALM Bangkok, REALM Songkhla and REALM Thumnoonvithim. Joining him are Chef Witoon Kamonphun, Head Chef of M Social Hotel Phuket, and Executive Chef David Toh of Grand Copthorne Waterfront Hotel Singapore.


Together, the trio presents an extensive menu inspired by Thailand's northern highlands, bustling central plains and seafood-rich southern coastline, blending authentic recipes with refined culinary techniques.


According to Grand Copthorne Waterfront Hotel Singapore's General Manager Andrew Tan, the overwhelming response to last year's Phuket Flavourscape Buffet inspired the hotel to broaden the concept into a more immersive celebration of Thailand's culinary traditions.



Rather than focusing on a single destination, this year's buffet explores the country's remarkable regional diversity, inviting diners to experience everything from fragrant curries and aromatic soups to vibrant street food and traditional Thai desserts.


Among the signature dishes are the robust Grand Tom Yum Goong, the luxurious Signature Yellow Curry Flower Crab, the richly flavoured Wagyu Massaman Curry, and the Andaman Seafood Curry with Betel Leaves, showcasing premium seafood alongside Thailand's distinctive herbs and spices.


Seafood lovers can also look forward to Steamed Seabass with Lime and Chilli, Fried River Prawns with Garlic and Pepper, and Pad Thai Goong, while comforting favourites such as Southern Phuket-Style Braised Pork Belly and Tom Yum Fried Rice with Prawns round out the impressive selection.


Beyond the buffet spread, live stations recreate the vibrant atmosphere of Thailand's street food scene with freshly grilled Moo Ping, authentic Thai Boat Noodles, freshly prepared Thai salads and an assortment of traditional condiments.


No Thai feast would be complete without dessert, and guests can indulge in sweet favourites including Mango Sticky Rice, Thai Tea Mousse Cake, Pumpkin Custard, Thai Crispy Pancakes, and Thai Milk Tea Ice Cream.


The opening night on 13 July promises an even more immersive cultural experience. Diners will be treated to a spectacular Thai-style Whole Golden Pig served with traditional sauces, while performances by Anurak Thai Arts & Culture will showcase classical Thai dance and the enchanting melodies of the traditional Khim instrument. Pop-up stalls and a lucky draw will further transform the evening into a celebration of Thailand's vibrant culture and hospitality.


The Thai-inspired experience extends beyond dinner. At The Lobby Lounge, guests can enjoy a specially curated Thailand Flavourscape Afternoon Tea, featuring savoury bites and desserts inspired by Thai flavours alongside an AI-powered wellness assessment and personalised herbal tea pairing created in collaboration with Luli.


For weekday diners seeking a lighter option, a Thailand Flavourscape Tiffin Lunch Set presents everyday Thai comfort food in a traditional multi-tiered tiffin carrier, featuring Thai Basil Minced Pork with Fried Egg, Thai Fish Cake, Tom Yum Soup with Prawn, vegetables, jasmine rice and dessert.


With its combination of authentic regional flavours, accomplished chefs and cultural performances, Thailand Flavourscape Buffet offers more than just a meal—it delivers an immersive taste of Thailand without leaving Singapore.



The Thailand Flavourscape Buffet is available at Food Capital, Grand Copthorne Waterfront Hotel Singapore, from 13 July to 10 August 2026, with both lunch and dinner seatings throughout the week. Reservations are recommended.
